Emerald Isle Cocktail

5-6 oz champagne
1 tablespoon green creme de menthe
Directions
Chill champagne.
Add creme de menthe to glass or flute, top with champagne and stir slightly.

Leprechaun Float

* 1 tablespoon Stout Syrup, recipe follows, or more to taste
* 1 scoop vanilla ice cream
* 1 scoop chocolate ice cream
* 1 (12-ounce) bottle stout (recommended: Guinness)

Directions

Drizzle syrup into a tall glass. Add a scoop each of vanilla and chocolate ice creams. Top with stout and serve immediately, to adults only!

Note: Recipe can be easily increased.
Stout Syrup:

1 cup sugar

1 (12-ounce) bottle stout (recommended: Guinness)

Bring sugar and stout to a boil in a saucepan. Reduce heat and simmer until thick, about 5 minutes. Let cool before using.

Yield: about 1 1/4 cups

Th Irish Rose

Ingredients
2 oz. Irish whiskey
1/4 oz. lemon juice
1/2 oz. grenadine
2 oz. soda water
Directions
Pour all ingredients in an old-fashioned glass that’s three-quarters full of ice. Stir and serve.

Adult Shamrock Shake

Ingredients
1 cup whole milk
1 pint mint chocolate chip ice cream
1 teaspoon pure mint extract
3 tablespoons dark rum
Directions
1) Put milk, ice cream, mint extract and rum into a blender. Mix until smooth.
2) Pour into chilled glasses and garnish with a sprig of mint.
3) Optional: Drop the rum and you’ve almost got a Shamrock Shake
